Berry Pancakes

These "pancakes" are easy to pre-make for the week and grab for breakfast.

Ingredients:

1/2 cup Cottage Cheese
3 Egg Whites
3/4 cup Oatmeal or soaked rolled oats
1 cup Blueberries (or other fruit)
1 tsp Cinnamon

Directions:

Combine all ingredients in blender, blend until well mixed.
Heat skillet or frying pan to medium heat, grease with butter.
Spoon 2 tbsps for each pancake.
Cook approximately 2 min each side, or until lightly browned.
Let cool and refrigerate. 

Makes 8-10 pancakes.

Eat as-is, or tastes great with almond butter!
