2 Blocks Carbs - 4 ½ Block servings.
Ingredients:
- 1 large red pepper
- 1 large yellow or orange pepper
- 1 jalapeño pepper or to taste
- ½ regular onion
- 1 clove garlic, minced
- 1/3 tsp olive oil
Seasoning:

Salt and pepper to taste
Cilantro to taste
Directions:
- Chop peppers and onion in food processor or to desired size, e.g. 1cm2.
- Combine all ingredients and seasonings.
- Sauté lightly in frying pan with olive oil on medium heat until peppers are soft but not limp.
- Cool and refrigerate
Suggestions:
Tastes great on "Mini Quiches" or "Chicken with Bacon and Cheese."
- You can also stuff ½ a whole wheat pita with 2 oz chicken, 1 oz cheese, 3 tbsp avocado, 1/2 tomato and 1 serving Chunky Pepper Salsa
