Ingredients:
- 1 ΒΌ cups zucchini, chopped fine (1 Block Carb)
- 6 cups cherry tomatoes (3 Blocks Carb)
- 1 cup low-fat cottage cheese (4 Blocks Protein)
- 4 teaspoons slivered almonds, chopped (4 Blocks fat)
Seasoning:

ΒΌ teaspoon garlic salt
1 teaspoon snipped chives
Directions:

In a saucepan, place zucchini and enough water to cover. Cook until tender

Remove from stove and cool

Using a knife, cut the tomatoes in half, then carefully cut out the inside of the tomato (or use a small melon baller to scoop it out) to create a tomato shell

If necessary, cut a little off the bottom of the tomatoes so they will sit on a plate without moving

Using a blender, combine cooked zucchini, tomato pulp, low-fat cottage cheese, almonds, garlic salt, and chives, blend until mixture is smooth

Fill tomatoes with low-fat cheese mixture
Arrange on serving plates and chill
